Blue Cheese, Walnut, and Blueberry Endive Chopped Salad

May is National Salad month! I had the pleasure of working with Driscoll's Berries and California Endive to develop a couple creations!


First though, before we get into the goods, let's pause for a quick vocabulary lesson, shall we?

When you read that title up there how did you pronounce endive?

Just like it looks- EN-dive?

OR did you get all fancy and say ON-deev?


If you were that fancy one saying ON-Deev, you were right!

While poking around the California Endive Farms website and social media, I found out I had been pronouncing this sort of vegetable wrong!




I was so excited when I got this package in the mail! Such a big box of salad goodness! I was shocked at how much we were provided. Thanks, California Endive! 


I think endive is actually pretty versatile in terms of how many ways you can use it, but I went the easy route with a chopped salad. Check out this recipe page to learn about all the other ways you can enjoy them! I think next I'll try this Shrimp and Avocado Ceviche in Endive Boats!


Blue Cheese and Cherry Chopped Endive Salad

Ingredients:
3/4 cup cherries, chopped (optional. I didn't add these but if I had them in the fridge they would've been in the mix for sure)
1/2 cup blue cheese
1/2 cup pecans, chopped
4-5 stems red and white endive, chopped
Cherry balsamic dressing, drizzled over salad

Directions:
1. Rinse and dry endive. Cut off end and discard.
2. Chop endive and put into a large bowl.
3. Add blue cheese, pecans, and cherries to the bowl with the endive.
4. Drizzle dressing over salad and toss to combine.


My next creation I put together was a unique salad for a side at my mom and dad's birthday party. Many were asking, "What is that?!?", "Looks healthy. Mollie must have made that." LOL, yep!

5 Ways to Enjoy Turning 50 {Guest Post: Words from Mom}

FIFTY ISN'T FATAL....

So what's the best way to deal with turning 50? 

  1. Your kids throw you a great party with all your friends and family involved(they all did a great job keeping the secret). We had a wonderful time, and the day was so special, the kids really put a lot of work into this party and we could definitely feel the love.

 2. Surround  yourself with great role models: the kind of women that are not worried about their age, that go through life enjoying every day and accepting every milestone in their life with grace.  I have the perfect role models, my girls at work show me  the importance of girl power and we support each other like our own little MCS family.  My BFF Carla is always smiling and is the most positive person I know.  We enjoy every moment we have together even though they are few and far between. Dennis has 5 sisters and each have qualities that I look up to, but Dennis's oldest sister, Irene, is well...crazy, but in a good way!  She's the most fun loving person I know. She's shown us all that it's the simple things in life that matter and that independence is something to be admired.  She loves with her whole heart and I'm honored to have her in my life. 

3.  Take time for yourself to enjoy the things you love to do.  I love listening to audiobooks so on my drive to and from work that's my time to enjoy one of the simple things that make me happy.  I love my days at home; having some down time with my 4 legged family is a great way to relax and enjoy a little time to myself without really being by myself.  That unconditional love makes all the difference.  Dennis and I also love to travel. We try and get away as much as possible. Our favorite is taking a cruise. It's so nice to get away and experience new cultures and leave everything at home behind.  But even when we are home living our everyday lives, I try to make everything a date night for us. Even something as simple as  going to town and looking at equipment at the farm sale, driving down the road on a gator looking for asparagus, or going together to get groceries. And even though he drives me crazy, I love spending time with my one and only love.


4.  Look back and reflect on all the blessings in your life.  My life hasn't always be easy, but I try not to dwell on the hard times and I celebrate the good times.  I met the man of my dreams, its been almost 30 years and love him more now than when we married.  He never acts his age and that helps me stay young at heart, too.  My kids are my greatest accomplishment and make me so proud.  But I can honestly say that they have given me much more than I have ever given them.  They and my granddaughter are a constant source of joy in my life, and I cherish every moment I have with them.


5. Look forward to the future.  I know we have a lot to look forward to in our family.  One wedding planned and soon to happen.  Josh has found his bride and I couldn't be happier for them. So excited for them to start their future together.  Kerstin is a special girl and we all love her as much as he does.  Mollie makes me wonder how she does it; she has it all... beautiful daughter, wonderful boyfriend in Tim and a career she loves.  She's like a superhero!


So, I'm turning 50. I can't do the splits, but I never could. Can't even do a half-assed cartwheel anymore.   But Kaydin is teaching me some new dance moves and I've been practicing my twerk for Dennis.  So my lesson for turning 50 is... I don't feel 50 so I'm not going to act 50. But I am proud to be 50.  I'm having the time of my life and the best it yet to come. With my family to share it with, I know I will enjoy every moment I have.

No sugar/no dairy meal plan- Week 2

Another week and still no sugar! I'm not excited about meal planning or cooking anymore. I really don't feel too restricted I just don't want to do it.

But alas, we have to eat though... :)

Day 8, Monday

Breakfast
steel cut oats with sweet potato
a little honey added in Kaydin's

toast with smashed avocado

salsa with avocado and blue corn tortilla chips

Day 9, Tuesday

When I picked Kaydin up from school she told me her teacher passed out fruit snacks for a good behavior treat to the class that day. Kaydin said she planned on saving hers so she could show me and we could figure out how much sugar was in it...but then few minutes later she decided to just eat it since it was a treat from her teacher and she was probably allowed to have it. LOL. Yes, since it was  treat from the teacher I would have let her have it. How insightful of thoughtful of her to think to save it for us to talk about together. Although, the typical child in her took over and she ate it without waiting, lol. I'm impressed with her thought process though and being aware.

That being said, this is what she wrote/drew at after school care today...

Day 11, Thursday

start of Advocare Max Phase (more info on those supplements at the end of the post)

2 pieces bread, one with Nuttzo and one with smashed avocado

Kaydin- leftover meatloaf and mashed potatoes, pear fruit cup
Me- Flatout wrap with Nuttzo, chia seeds, hemp hearts

Kaydin- softball treat after the game- Capri Sun and fruit roll-up

Fruit smoothie with coconut water and spinach

The Max Phase supplements do not at all mix with my body well. They make me feel queasy, uneasy, not quite jittery but something like that. I hope it goes away soon or I will be taking breaks and not taking them everyday, maybe every other. I know that's not following the plan as is, but that's ok!

 


Day 12, Friday

Lunch
Campus picnic- hamburger with no bun or cheese. Lettuce, tomato, onion and pickle on top.

Day 13, Saturday

I can't remember what we ate in the middle of the day. It wasn't much since we had a spread out breakfast.

Date night at Eatery A- Olive, lavash, and tapenade appetizer
anchovy, brussel sprouts and gremalata pizza




Comments
Date night with no drink is hard! Tim and I rarely drink but the rare occasion we go out to dinner just the two of us it's nice to have a glass of wine, mojito, martini, or bloody mary. No alcohol for about 10 more days.


Day 14, Sunday

Breakfast
steel cut oats with banana and sweet potato

Lunch
1/2 pork brat
2 slices steak
pineapple, strawberries, few pieces banana
spinach with little drizzle blue cheese vinaigrette dressing

Dinner
2 scrambled eggs (I beat my scrambled eggs with unsweetened almond milk. So good!)
1 avocado
 red and green grapes
pear

Kaydin- Alpha-Bits cereal with unsweetened almond milk

Reflections

It's gotten hard to keep Kaydin from not eating sugar in anything. She's has zero treats and desserts (minus the softball treats after games) but to cut out everything has been harder with her. Like the BBQ sauce with her meatloaf, the Alpha-Bits cereal she requested  as a light dinner Sunday night, or the bun with her hot dog she ate at Summer's house.

I've been staying away from dairy still 95% of the time. I did cave and break the rules when I ordered my pizza Saturday night, though.

I'm not sure if my tastes are changing yet or not, but on Friday when I had a piece of pineapple, it was soooo sweet to me. It may have been that it was just a particularly ripe and sweet piece but it was super sweet. Also, my oatmeal has not been sweetened at all, just with the fruit. I actually really enjoy it not being that sweet. I like that the grain, oat taste is not drowned out by other more sugary sweeteners.

Most of the week I have not wanted a dessert. That is, Saturday and Sunday night I really would've loved to stuff my face with a baked good, ice cream, anything!!

I took most of the weekend off from taking the supplements. Didn't want to feel nauseated the whole time.

Memorial Weekend 2014

We had a jam packed Memorial Weekend this year!

The weather wasn't the best but it wasn't the worst either. Can't complain!

We started out our weekend by hitting up Hy-Vee for the salad bar for dinner Friday night. Their marinated kale salad is sooo good! I always fill up a good portion of my plate with that.





After we got home Tim and Kaydin watched one of the Lord of the Rings movies. Not my favorite type of movie but Tim and Kaydin have been getting into those and the Hobbit movies lately. Instead of movie watching I camped out alone in the bedroom and caught up on a bunch of blog reading.

Saturday we woke up fairly early to head to the farmer's market. Seeing lots of backed up traffic had me choosing a different parking garage than we normally do. Kaydin decided we needed to park at the very top. I'm glad we did though, because we took the time to scope out some new views of the downtown area.










After we browsed all the market offerings and found some plants and some herbs I'd been looking for, we grabbed a smoothie for the road. We had an appointment to get to! Kaydin was getting her hair braided up for the start of summer!



After the three hour hair appointment we hit up the nearby K-Mart to find Kaydin some summer sandals. The girl's feet have been growing like crazy and she's grown out of a majority of her shoes.

A few hours later we headed to the other side of town. Tim and I had a dinner date planned! Eatery A has great food and a fun atmosphere. Definitely a great place to hang out on a summer night!


While Tim and I were enjoying a new restaurant in the city and some delicious pizza, Kaydin was having lots of fun of her own with Baby Charlotte! My friend Summer was kind enough to host Kaydin at their house to play while Tim and I finally got some time alone.



Sunday we all slept in as best we could (only about 7:40) and had a slow morning. After some lounging and eating breakfast we went to Kristyn's house to see her new puppy! It's been a long time coming for her to find a dog and the right rescue finally came along!

Next, we moved on to a little shopping. Goodwill, Target, and Home Depot and then home to Tim and a quick lunch of grilled meat, salad, and fruit.


When we were eating, Tim proclaimed after we were done with lunch we were going out shopping for a new bike for Kaydin. Say whaaa??? We had been having trouble with her chain coming loose so I guess it was time she needed a new one.

We found the perfect one at Dick's Sporting Goods.


Since we were next to Costco we made a quick stop there after bike shopping for strawberries, raspberries and almond milk.

Once we got back home again Kaydin was anxious to test out her new bike. Tim had to run to the office to get a few things done so Kaydin and I hit the trail on our bikes. We were on our way back and only 1/2 block from home when I heard a tumble and looked back just in time to see her tumble end over end with the new bike tumbling, too. Luckily she was wearing her helmet but we were unable to find new elbow pads at the sporting goods store. #fail

She was tough though and only cried for a little bit while pushing home her new bike. A quick wash of the scraped up knee and elbow and we were back out the door to beat the rain clouds and get some new peppers, tomatoes, and herbs planted. We got it all done in time to be hit with a few giant raindrops as we were cleaning up.

A quick trip to the shower and then time to search for an easy dinner. Eggs, avocado, and random fruit made up an quick and easy dinner!


Tim and I wrapped up our Sunday by watching the movie 10,000 B.C. Been a long time since we'd seen it (back in summer of 2008 when we first started dating) so that was the one we finally settled on.

Monday morning we finally slept past 8:00am! Almost 9:00 actually! We ate some breakfast, got ready to leave the house, and went to Wal-Mart for some household and bathroom essentials. I was also still in search of some strawberry plants. I've checked many stores and everyone is sold out. I guess I waited too long to finally buy some.

Also on my agenda for Monday was weeding the garden and planting the last of my seeds. I just love being outside at the garden, seeing the little sprouts grow and get stronger. I am so excited for them to keep growing and start producing some food! I told Tim I could be out there messing around for hours. He looked at me like i was crazy. I forgot how much I love to garden. So rewarding to see so many things actually growing! :)


While I worked outside, Tim took the dogs for a run with Kaydin keeping at his side on her new bike. She's already a pro. Minus the tumble and wipe out the previous day! :)

The rest of the afternoon was spent blogging, editing pictures and grocery shopping. Another trip to the grocery store, reading labels and leaving with nothing containing sugar!

And our Memorial Weekend ended with The Bachelorette. Yes, a ridiculous reality staged show with a ridiculous cast but I still watch every season! #guiltypleasure :)

2014 Summer Bucket List

It's Memorial Day!

Memorial Day not only has a significant meaning to honor those who have fallen before us, but also seems to signify the unofficial start to summer!

That means I've been thinking about all the fun things I want to accomplish this summer. One evening last week Kaydin and I got out pencil and paper and started making our lists.

Hi Friends! Happy Friday!

And Happy Memorial Day Weekend!! Typical cliche but-- How the heck is it Memorial Day already?!?!

We've got a few fun things planned, some yard work to complete and hopefully a couple good grilled meals in my near future! :)

1. BLEND
It's getting closer!!!! I'm so excited to head back to Utah to reunite with the friends I made last year and meet some new people at the same time!

3. Work Life
May, June and probably July are seeming to be my busiest months of the year grant submission wise. I'm busy building budgets and crunching numbers all day long and I love it!! I probably annoy Tim with how many times I say I love my job, but I do!! :)

4. Kaydin and I made our summer bucket lists the other night! We each made our own list and we came up with lots of fun things to do! I was impressed with some of the things she came up with. I'll be sharing soon!

5. Speaking of summer activities, I've been working through the calendar for the next few months laying out days off, vacations, events, etc. We have one fun, busy summer ahead! My brother is getting married in September, too, so lots of fun things to look forward to!! Can't wait to share all the details of what they've been planning and all the events along the way!

No sugar/no dairy meal plan- Week 1

Alright we're 10 days into this experiment and it's going pretty well! Bring on the next couple weeks! :)

Day 1

Breakfast
1/2 packet Spark with 20 oz water (Advocare energy powder)
Apple with Nuttzo nut butter

Lunch
Kaydin- organic roasted turkey and hummus wrap
Veggies chips
1/2 red delicious apple
baby carrots

Me- Hummus with LOTS of grape tomatoes, broccoli, and carrots.

Snack
Kaydin-Handful veggie chips
baby carrots

Me- Handful veggie chips
handful garlic sesame chips

Dinner
Pupusas and tamales at El Salvador Del Mundo with Alex

My co-worker brought chocolate chip cookies to the office that  looked amazing but surprisingly I had no trouble turning them down. Even when they sat out on her desk all day I had no desire to have one.

When we were leaving the restaurant, the waitress offered Kaydin candy from the candy dish. Kaydin was a little disappointed when I had to turn her down.

Day 2

Breakfast
1/2 packet Spark with 20 oz water
Citrus fiber drink with 16 oz water (advocare supplement
16 oz smoothie with mixed fruit, water, almond milk, chia seeds, flax seeds, hemp hearts.








Lunch

Me-Chopped endive with Bolthouse balsamic vinegar. There's no sugar in this dressing! :)
Hummus with grape tomatoes, broccoli, and carrots.

Dinner
Ground turkey with soy sauce, sesame seeds and other spices and herbs
sauteed rainbow chard
grape tomatoes
2 fruit leathers (all fruit purees with lemon juice) I had a major sweet craving after I ate dinner and found these acceptable dessert substitutes in the cupboard.

Only the 2nd day but I had a major sweets craving after I ate a pretty salty dinner.

Day 3

I didn't get my food logged this day and CANNOT for the life of me remember what we had. It didn't contain sugar though, I know that! :)

Comments
I attended an event where pie was being served this particular evening. I thought it would be hard to pass on it, and it sorta was, I guess. I mean, normally I would never think twice about having pie at an event, but this time, even though I wanted it, I refrained. High five! :)

Day 4

Breakfast
1/2 packet Spark with 20 oz water
Citrus fiber drink with 16 oz water
2 Catalyst capsules (Advocare amino acid supplement) Should have been taking these since Monday but finally remembered to bring them from home.
1/2 apple
banana
handful raw almonds

Lunch
leftover turkey and greens

Snack
few handfuls of mixed nuts

Dinner
blue corn tortilla chips
guacamole
fresh salsa
Boom Chicka Pop sea salt popcorn
Kaydin- also had Silk peach mango yogurt

Another event and pizza was served. And Chex Mix. Did you know Chex Mix has sugar?!? I didn't either. I was being curious and looked up the ingredients online before the event. Honestly, it sucked not eating the food offered there but I want to give this thing fair shot. I was pleasantly surprised the caterers brought mixed nuts. Yay, something I could eat! :)

We stopped by the grocery store for a few things and I noticed non-dairy yogurt was on sale. Kaydin loves yogurt so I was excited to be able to offer it to her. I didn't realize that duh, the peach mango flavor had sugar in it! I was telling Tim I grabbed her some yogurt to have for dinner and he said, uh- doesn't that have sugar??  There I was searching all the salsa ingredient labels for something that didn't have sugar and then the thought completely escaped me when I grabbed a non-dairy yogurt! Oops!

Day 5

Breakfast
1/2 packet Spark with 20 oz water
Citrus fiber drink with 16 oz water
2 Catalyst capsules
2 Probiotic Restore capsules (Advocare supplements)

handful raw almonds

Lunch
Potato wedges
Spinach salad with veggies and pico de gallo


Dinner
1/2 salmon fillet
1/2 tilapia fillet (Kaydin and I shared each piece of fish)
roasted broccoli
roasted green beans
roasted baby red potatoes

Comments
I'm noticing that my intake of salty foods is rising. Because I know I can't eat foods that are sweet (for the most part) I have been instead turning to salty foods. Not usually like me. Normally I keep a balance sweet and salty cravings.

Day 6

Breakfast
Kaydin- plain oatmeal with a little bit of honey

Me-Fiber drink with 16 oz water
2 Probiotic Restore
scrambled eggs
Fried leftover red potatoes

Snack
Kaydin- softball treat after the game- chewy chocolate granola bar and roaring waters Capri Sun

After our softball game this morning Kaydin got in the car grumpy and sad. I asked what was wrong as we were pulling out of the parking lot. She burst into tears and exclaimed "I can't eat my treat, it has sugar in it!" Oh, poor Kaydin Baby! :( lol I am really happy she was aware of the sugar but also don't want to make her feel like an outcast or sad she can't participate with her friends. That reaction obviously shocked me and caught me off guard. As you can see in the log above, she got to have her softball treat. :)

We did order a sushi roll that had a small amount of cream cheese, our favorite! And I didn't expect some rolls to be covered in eel sauce that I'm sure had sugar. We ate it all anyway. :)

Reflections

I am not one that lives her life with food restrictions. I don't believe in it. Moderation, sure! But not restrictions. However, this experiment is doing wonders for awareness. There have been a couple nights when I really wanted a dessert. Something sweet, something baked, anything! But I didn't cave.

Breakfast was my hardest meal to prepare for and come up with ideas. This week it's been better.

Something else I've noticed is bread is really hard to find with no sugar, brown sugar, honey, etc. Might have to just get over my yeast fear and make my own!


*I also took 2 fish oil capsules in the morning when I would remember. i.e.- it was very sporadic.

**Morning breakasts at home are not a strength of mine. This past week Kaydin ate most of her breakfasts at school. She inevitably ate sugar with those meals but she did not have dairy. She passed on milk and instead had water. We're doing much better about eating at home this week.

***Two days this week Kaydin chose to have school lunch even though I packed a lunch for her that little stinker! And one of those days grilled cheese sandwiches were served. Gahhh!!!

****So apparently I can't follow directions and I didn't follow the 10 Day cleanse plan the exact way I should've. I've taken everything I should have just not in the correct order. For example, I was supposed to have the fiber drink day 1-3 and day 8-10. I drank it day 2-7. And can I just say I actually enjoyed the fiber drink! I am probably one of the few people that liked it and didn't have to gag it down. I mean, it's not the greatest thing I've ever had but the flavor was easily tolerable and I really liked the thick grainy texture.

*****Tim and Kaydin are not following the plan 100% and have had some "cheats", some intentional and some not. Honestly, this is ok. It's my experiment. One that I would really like for them to be into as much as me, but they aren't and I can't force it. Especially when Kaydin opts for hot lunch instead of the cold lunch I packed her that's in her backpack! I'm not there with her at school and she made a choice that I couldn't control. We talked about it and I explained to her the aspect of essentially wasting money when she did that and I hope it doesn't happen again (mainly for the money reasoning) but I can't control everything when I'm not around. When I am around though, she does not get to bring home the fruit snacks or the cookies she asks for at the grocery store. She has to deal with it and eat her eggs without ketchup for these couple weeks. Also, I don't eat every meal with Tim nor do I provide it. He's an adult and I can't force him to lay off the BBQ sauce on his pulled pork sandwich for lunch. He likes his dairy and hasn't cut that out 100% but is not drinking cow's milk for the time being. Overall though, they are both participating pretty well and I'm happy about that!

******I didn't document everything Kaydin ate perfectly. I've included what I know. Just because I didn't list a breakfast doesn't mean she didn't eat it. I also didn't include what Tim ate when we weren't together. Or at all really. Sometimes we ate different things when we were together.

Kaydin will be one happy girl when this challenge is over and she can have a dessert or candy again. But truthfully, so will I! :)
