Bacon, Blue Cheese, and Spinach Puff Pizza

I've got an easy but elegant-looking (not to mention indulgent) recipe to share with you today that you will love!

I mean, c'mon, read that title again! Bacon. Blue cheese. Spinach. A perfect blend of savory flavors. Yum!

This is a favorite flavor combination of mine! And it comes together so simply but looks like you spent hours preparing. The hardest part of this recipe, if you can even call it hard, is stretching the pastry dough and squeezing the liquid out of the spinach!

After a short bake in the oven you'll pull out this....

Melty, buttery, crispy, salty, cheesy! Oh, yum!

When we start eating dairy again this is definitely going into our meal plan!

Bacon, Blue Cheese, and Spinach Puff Pizza

1 sheet puff pastry, thawed
3 strips bacon, crumbled
10 oz frosen spinach, thawed and liquid squeezed out
1/2 cup blue cheese, crumbled
1/2 cup mozzarella cheese, shredded
1 1/2 tsp garlic powder
1/2 tsp cracked black pepper

1. Preheat oven to 425 degrees. Spread and stretch puff pastry on baking sheet to make a thin crust layer using your hands or a rolling pin.
2. Mix remaining ingredients in a small bowl.
3. Spread spinach and cheese mixture evenly over the puff pastry.
4. Place in heated oven and bake for about 15 minutes of until pastry edges and cheese are golden brown.

You can even make a portion (or the whole thing!) vegetarian by omitting the bacon on one section of the pizza like I did.

We paired our puff pizza with a green salad to make a complete, easy, weeknight meal!

Do you use puff pastry?
This was actually my first time buying it and making it at home.
