I have a recipe for you that will help clean out your pantry and your fridge! I love it when that happens! I have such a big food supply in our kitchen that I always get giddy when I make a recipe that uses what we have on hand and can help dwindle down the over packed cupboards.
Friends, if there's ever a huge natural disaster or emergency situation (frantically knocking on wood over here!) you know where to head first. I can feed y'all for at least a week!
I decided to make a corn and bean salad using those pantry ingredients and also a few from the fridge. We had half a red pepper and half a red onion that needed to be used up or tossed soon. Perfect! Italian dressing to give the salad a little flavor and optional fresh parsley were all that was left to round out this recipe!
Chop your fresh veggies and herbs, toss all in a large bowl and you're set! A quick, healthy salad side dish in just a few minutes!
Ingredients:
1 can organic garbanzo beans, drained
1 can organic black beans, drained
1 can organic sweet corn, drained
1/2 red onion, minced
3 cloves garlic, minced
1/2 red pepper, chopped
3-4 tablespoons fresh parsley, chopped
1/3 cup Italian dressing
Directions:
Chop onion, garlic, pepper, and parsley.
Drain cans.
Add all ingredients to a large bowl and mix well.
