Tilapia foil packets

Warmer weather to me means bring on the grill! One of my favorite things to grill are foil packets with veggies and tilapia fillets. I can't take credit for this quick, non-recipe recipe.  My friend Kristyn makes the best version of these. We usually make them with potatoes, too, sliced fairly thin but I didn't have those on hand the night I made these. I also didn't use the grill either; I popped them in the oven and baked 'em.  Works just as well but I prefer the grilled method.

Into the foil packet went asparagus, brussel sprouts, carrots, and mushrooms. I also threw in some minced garlic, fresh cracked pepper, a little bit of salt, and fresh lemon juice.  Wrap that all up in aluminum foil and bake for 15-20 minutes at 400 degrees, or if the weather is cooperating and you can use your grill they will need about the same amount of time.
This is a perfect solution when you don't know what to make on a weeknight. The fish doesn't need to be thawed and the packets are totally customizable! If your kids don't like mushrooms, just leave them out of their packet, like I did for Kaydin. Use whatever vegetables you like to suit your tastes.
These were good, but Kristyn's are definitely better! <--- hint, hint, Kristyn, if you are reading ;)  It's grilling season!
