Josh's signature pizza and a nostalgic dessert

Last weekend Kaydin and I made the trip home to Mom and Dad's house. My brother Josh and I worked on making the menu all week.  The thing I was most excited about was his white chicken pizza. He first made it for me when Kaydin was just a tiny baby and we lived in an apartment in Des Moines together.

It starts with this garlic and herb dough from Trader Joe's. If you haven't tried this kind yet you need to!

Josh grilled up the chicken and veggies that would serve as the toppings.

I laid the veggies on top of jarred Lite Parmesan Alfredo pasta sauce and a sprinkling of Italian seasonings.

I finished this pizza with a sprinkling of mozzarella and an Italian mix of cheeses.

We also made another pizza. This one was 1/2 BBQ chicken, 1/2 cheese and pepperoni.

Yum! So good!

I didn't eat too much pizza because I knew a yummy dessert was coming. I had to save room!!
Chocolate chip pancakes with vanilla ice cream! The original recipe is one I made in my 7th grade home ec class. Technically the recipe was for crepes when we made them in school but for ease we adapted to just add chocolate chips to pancake patter. We made this many times growing. It had been years since I had had it and it for some reason popped in my head when trying to come up with good ideas to have for the weeked.

It was Kaydin's first time having it. She wasn't sure about ice cream with pancakes....

but I think she liked it, too!

  1. Omg!! I remember making those in class!! I used that recipe for years as well. How funny thatcensor making is the life skill that we would take away from that class :) I love reading your blog and seeing Kadin grow up and experience life through it. Makes me feel like I am back in Iowa.
