There are several variations of the fish taco. Here is our take:
I heated a corn tortilla in a skillet.
Spread the tortilla with Mayo with olive oil and chili powder mixture.
Next, came the fish. Tim grilled the tilapia over medium heat for about 10-12 minutes on the top rack. He used fresh cracked pepper, paprika, chili powder, and lime juice as seasoning.
The next layer was a homemade corn salsa made with corn, roma tomato, red onion, cilantro, lime juice and fresh cracked pepper.
We also added avocado, light sour cream, cilantro and shredded cabbage to top it off.
Perfection!
I also made some cilantro lime brown rice as a side. I followed the basic recipe found here. It was not my favorite. :( I'll stick to getting that at Chipotle. My version was not near as good!
