Girls Night Out- at the theater

 Last night Kaydin and I ventured out to the Civic Center to see the opening night of Bring It On.  It was great!  Really funny and the routines were great! Kaydin left wanting to  be a cheerleader when she grows up!

Thanks, Summer, for the opportunity! It was a fun night!

Cake mix bars

Last weekend when Traci, Summer, and I got together to do some crafting, I needed something easy to throw together for us to snack on. I knew I wanted to bring a quick and easy bar recipe. I had a few cake mixes just sitting in my cupboard and have seen many cake mix recipes floating around pinterest.  I did a quick google search for cake mix bars and found this recipe. Simple and easy!

Slightly adapted from Lovin' in the Oven
  • 1 1/4 cup funfetti cake mix

  • 3/4 cup AP flour

  • 1/4 teaspoon baking soda

  • 3/4 cup butter, melted and slightly cooled

  • 1 egg

  • 1 egg yolk

  • 2 teaspoons vanilla

  • 1/2 cup sugar

  • 1/2 cup brown sugar

    1. Preheat oven to 350F. Grease an 8 x 8 inch pan.
    2. Cream both sugars, butter, vanilla, egg, and egg yolk. 
    3. Gradually mix in flour, cake mix, and baking soda until just mixed.
    4. Spread batter evenly into greased pan.
    5. Bake for 28-30 minutes until top is lightly browned and middle still jiggles slightly. Cool completely before cutting.

    Juice for Breakfast

    As often as I can, I juice in the morning for a great nutrient filled jump-start to the day. 
    Our breakfast goes from this...

    I have experimented with lots of combinations, usually adding what is available. My favorite that I have made so far is:

    2 apples
    1 pear
    2 small stalks of celery
    3 carrots
    1/2 lemon

    I like to use that as my base and then add other things from there. I have also been successful with adding 1/2 cucumber, handful of grapes, handful of blueberries, small knob of ginger, clementines, and leaves of kale. The possibilities are endless!

    Very Veggie Pizza

    Sometimes you just crave veggies....and pizza! The best way to make pizza a healthy choice is to load it with vegetables and choose a low calorie, high fiber crust.  So that's just what I did when making supper a few nights ago. I have been packing my fridge with produce because I have been juicing about every other day at least. This was a great way to use of some of that produce!

    The crust I chose to use was the lavash bread I mentioned here.  It's whole grain and only 100 calories for the whole rectangle!  I baked it in the oven at 400 degrees for just 5-6 minutes so it wouldn't get soggy when I added the sauce and toppings.

    While the crust was crisping, I chopped up all my veggies. Lots to chose from in my fridge lately!

     We added green olives, black olives, spinach, kale....

    ...roma tomatoes, green peppers, mushrooms, and broccoli.  The only one I forgot to add that I wanted to was red onion.
    I spread a thin layer of pizza sauce on the crust then piled on all the veggies.

    Next, came the cheese. I used pre-shredded pizza cheese from Hy-Vee and also added a sprinkling of feta cheese. I love adding feta to pizza. Gives it a nice tang.  I also added some deli Virginia baked ham that was near it's end to one side of the pizza. Turned out really good. Top the cheese with some Italian seasoning and it's ready to go back in the oven until the cheese is melted. I could've left it in just a tad longer to soften the veggies even more, but didn't want the edges of the crust to get even browner.  Now this is a healthy, indulgent, delicious pizza! And ready from start to finish in about 15-20 minutes. Can't beat that!

    Grilled Tilapia Tacos with Corn Salsa and Avocado

    Sunday night for supper we fish tacos. One of Tim and I's favorites. Kaydin didn't end up liking the assembled taco but she did pick out her fish. 

    There are several variations of the fish taco.  Here is our take:
    I heated a corn tortilla in a skillet.
    Spread the tortilla with  Mayo with olive oil and chili powder mixture.
    Next, came the fish.  Tim grilled the tilapia over medium heat for about 10-12 minutes on the top rack. He used fresh cracked pepper, paprika, chili powder, and lime juice as seasoning.
    The next layer was a homemade corn salsa made with corn, roma tomato, red onion, cilantro, lime juice and fresh cracked pepper.
    We also added avocado, light sour cream, cilantro and shredded cabbage to top it off.

    I also made some cilantro lime brown rice as a side.  I followed the basic recipe found here.  It was not my favorite. :( I'll stick to getting that at Chipotle.  My version was not near as good!

    Homemade Headband

    Today two of my friends, Traci and Summer, and I had a Craft Day!  Now I am not the most crafty person- this was verified many times today - but I actually made something really cute!! With some help from Traci, of course.  Ok- alot of help! She taught me how to make fabric flowers and we made them into a cute chic headband. And I actually made one of the flowers myself from start to finish! My mom would be proud! :)  She gave all her crafty creative genes to my brother.  My dad also gave them to him, too. I was left with none!

    14 Days of Love

    This year for Valentine's Day I decided to stretch it out a little longer- 13 days longer, actually!
    February 1st, I implemented 14 Days of Love!  I came up with 14 different ideas of little things that Tim liked or would appreciate and then made a plan of when they would best work.  It wasn't a great deal of work, was inexpensive, and lots of fun!
    Day 1- Peanut Butter Cheerios

    Day 2- Poem hung on the mirror

    Day 3- Juice and Tim's favorite donuts waiting him in his car in the morning.

    Day 4- Picture of Kaydin and I left in his car.
    Day 5- Packages of Biscoff cookies.
    Day 6- New bottle of body wash.
    Day 7- Picture drawn by Kaydin
    Day 8- Framed picture of Tim and I at Times Square.

    Day 9- Containers of his favorite yogurt, Noosa

    Day 10- Oakley's sunglasses case
    Day 11- Chocolate melting cake like we had on our cruise last spring.

    Day 12- Cook breakfast for him in the morning.
    Day 13- A framed print to go in his office

    Day 14- Letter and Valentine's card

    I think Tim enjoyed the 14 days, too!

    Valentine Cake Balls

    While back home at Mom and Dad's a couple weekends ago, cake balls were also on the menu.  I have never made cake balls but knew the general process. I used a Christmas boxed cake mix that I didn't get to over the holidays. I baked it up according to the box 

    Next, I crumbled it all up. I think this my favorite step. I made sure to remove, aka eat, all the edges that wouldn't mix well with the frosting.
    I had a helper trying to swipe the frosting as I was mixing it into the cake crumbles.

    Once I let the balls harden in the freezer for awhile I got to the dreaded dipping step. I do not have much grace for making things really pretty. I get too impatient and want to be effiicient all the time. This usually means that things do not come out looking like I spent two hours on them to be perfection. A cake decorator I will never be.  Now Josh on the other hand....he can make anything look really cool. Whether it be food, jewelry, paintings, drawings, even metal weldings. He definitely got all the artistic and creative genes.

    Pizza Night with a Valentine Twist

    It's Friday night! That means pizza night! It has been awhile since we've had pizza on a Friday night so I figured what better way to bring it back than with a special Valentine's heart shaped pizza from Papa Murphy's!

    Smore's pizza!! I love smore's, but somehow Kaydin does not. They are too sticky for her and she hates marshmallows.  I'm really not even sure if she's mine ;) I have a hard time claiming her when she passes up on smore's.

    We actually saved the smore's pizza for tomorrow night though in favor of some cupcakes Tim brought home from a client of his.  The flavors were peanut butter and jelly, creme brulee, chocolate indulgence, and cherry cheesecake.  The cake part was really good! I'm not a huge frosting fan so that part didn't completely win me over, but that's hard to do with frosting. I will say they were still really good though!     My favorite was the creme brulee filling and the peanut butter frosting!
