I usually use lavash bread as the base which is a lower calorie, whole wheat tortilla in a rectangle shape. They are huge and only 100 calories. I pick them up in the Wal-Mart bakery section for cheap. This week though, I got some multi-grain tortillas on sale at Hy-Vee so I have been using them.
In the wrap I included:
- Roasted red pepper hummus spread on the tortilla
- Salmon
- Arugula
- Mixed baby greens
- Feta cheese
- Kalamata olives
- Artichoke hearts
- Cherry tomatoes
In the somewhat near future I will post my recipe for a Greek pasta salad that I first made last winter. So good!
YUM! I just bought a huge thing of Feta cheese and artichokes at Sam's club - this looks delish!
