Fall Eats

Everyone that knows me well knows that fall is my ABSOLUTE ALL TIME FAVORITE time of year!! I just love the changing of the leaves, no humidity, cool crisp mornings...I love everything about fall-- except the looming snow that follows the best season ever, dreaded winter!  That's why Tim hates fall. He says everything dies and it means winter is coming. lol  But I love fall!! I wish it stayed around longer than it does. 

Two other reasons I love fall so much is the food at this time of year, specifically pumpkin and apples!! I've made a few quick fall foods so far this year.

They include:

pumpkin cream cheese
I wish I had an endless supply of this!  And it's so easy to mix up.
- 8oz low fat cream cheese, softened
- ½ cup canned pure pumpkin
- 1 1/2 tsp pumpkin pie spice
- 1 tsp vanilla
- 2 tbsp brown sugar
- dash of salt


Apple chips
These turned out soo well! I used a mandolin to slice the apples really thin.  Then I layed em out on a cookie sheet, lightly sprayed them with olive oil and sprinkled them with cinnamon and sugar. I  baked em at 250 degrees for about 45 min. They came out crisp and yummy!





Apple and pear crisp
For this I used a basic recipe of apples, pears, little flour, sugar and brown sugar, oatmeal for the topping.  I also made a quick homemade whipped cream with some heavy whipping cream, powdered sugar, and vanilla beans<------ soooo good!!



Baked pumpkin donuts
I liked this recipe, but I think I would modify just a little because they turned out a little dry.





Pumpkin rice crispie bars
For these I used some pumpkin flavored marshmallows I found at Wal-Mart this year.  We made a 2nd batch with some candy corns tucked in to share as treats with Kaydin's soccer team!



Applesauce
So easy and so good!! And a crockpot recipe. Throw it in and let it be!

 Pumpkin pizza
Nothing I made but still a fall favorite for Halloween weekend. Cheap and fun pizza night from Papa Murphy's
