
Today I tried a few new easy recipes! First was roasted green beans. I used some green beans from this big bag that Mom brought me last weekend from Josh's garden. I rinsed and washed them then layed them out on a baking sheet. I drizzled wm with olive oil and sprinkled on sea salt and fresh cracked pepper. I'm not sure how long I had them in the 425 degree oven, maybe 25 minutes or so.
While the green beans were roasting I proceeded with an easy gazpacho recipe that I found on one the blogs I sometimes read. The recipe can be found
here. I followed it pretty close (but I halved it). The tomatoes I used were also from Josh's garden.
After my lunch I was having a craving for chocolate cake. I remembered one of the recent pins I made on
Pinterest. An easy recipe that used a coffee mug and the mircowave. Perfect, quick solution for my craving. And another bonus is that I had half a cake mix in the pantry leftover from some cupcakes Kaydin and I made earlier this summer.
I used the cake recipe as a guide and added an egg, maybe 2 tbsp of water and 1 tbsp of coconut oil. I then cooked it for 1 1/2 minutes. The verdict: one minute would have been plenty since I like the gooey, batter-y cake mix. I think I just didn't add enough liquids and it dried out by cooking it all the way. I forgot to take a picture of the finished cake but I forsee many variations in the future :)
After taking the dogs for a run I had this waiting for me!
Very good movie! I highly recommend for a time when the boyfriend or husband is busy and you can watch alone or with girlfriends!
